Greek Orzo Salad
Greek Orzo Salad
This is a great way to use up leftover orzo, and goes well with grilled lamb chops.
Ingredients:
1 cup cooked orzo with feta
1 cup diced red pepper
1 cup diced cucumber
1 cup diced tomatoes
½ cup kalamata olives, sliced
½ cup green onions, finely sliced
¼ cup chopped fresh parsley
¼ cup chopped fresh dill
Dressing
1 or 2 garlic cloves, crushed into paste
3 Tbsp olive oil
2 Tbsp pesto
2 Tbsp fresh lemon juice
½ tsp each salt and pepper
Serves 4
Method:
In a serving bowl, mix the orzo together with the vegetables and herbs.
Whisk the dressing ingredients together and gently stir into the orzo mixture.
