Mom's Natural Bran Muffins

 

Preheat oven to 350°

Use muffin pans with large cups, lined with paper cups

Ingredients:

2 cups dark raisins

4 eggs
1 cup oil
2 cups Demara or brown sugar

1 cup molasses
1 litre buttermilk

1 tsp vanilla
2 tsp salt

3/4 cup wheat germ
4 tsps baking soda
3 tsps baking powder

4 cups cooking bran

3+3/4 cups whole wheat flour

Makes approx 4 dozen muffins

Method:

Soak the raisins in warm water while mixing the first 2 sets of ingredients.

In a very large bowl, beat the eggs till light.
Beat in the oil, then sugar, using high speed on the mixer.


Add molasses and buttermilk and mix well using slow speed on the mixer.


Drain the raisins. Add them to the mixture with the vanilla and salt. Mix well.

Mix in the wheat germ, soda and baking powder.

Set the electric mixer aside. Use a large spoon or dough whisk, and only mix enough to dampen the dry ingredients.

Mix in the bran, 1 cup at a time.

Mix in the flour, 1 cup at a time. Mixture will be quite thick.

Drop by 1/4 cupfuls into the large paper cups.
Bake for 25 mins, or until cake tester inserted into the centre comes out clean.
