Shirley’s Chocolate Chip Muffins
Preheat oven to 375°F
Quick, easy and absolutely addictive.
Ingredients:
2 cups flour
1 cup white sugar
3/4 cup margarine
1 cup sour milk, OR
sweet milk + 2 Tbsp vinegar
1 tsp baking soda
1 egg, unbeaten
1/2 cup chocolate chips
1 tsp vanilla
Yield: 2 dozen muffins
Method:
Sift flour and sugar into bowl. Blend in margarine with a pastry blender. Remove 1/2 cup of the mixture for later.
Add remaining ingredients to flour mixture all at once. Mix together gently.
Spoon into well-greased muffin pans, or paper muffin cups. Sprinkle the reserved crumbs on top.
Bake at 375°F for 15-20 minutes.
