HAM SALAD with PEPPERS and CORN

3-4 thick slices of cooked, smoked ham
1/2 red pepper, diced
1/2 yellow pepper, diced
4 green onions, chopped
1 cup fresh or frozen, thawed corn kernels

Dice the smoked ham. Place in a salad bowl and mix with the peppers, onions and corn.

Chili-Lime Mayonnaise:
1/4 cup mayonnaise
1 tsp chili powder
2 Tbsp fresh lime juice
2 Tbsp chopped coriander (optional)
salt + pepper, to taste
|
In a small bowl, whisk together the mayonnaise, chili powder, lime juice and (optional) coriander. Season with salt and pepper. Toss dressing with the ham mixture.

Romaine lettuce
corn chips
|
Place the ham mixture on lettuce-lined plates. Garnish with corn chips.
