2 tsp olive oil 1 onion, chopped 2 cloves garlic, finely chopped |
Heat oil in a large skillet. Add onion and garlic and cook gently until tender. |

2 pounds extra-lean ground beef 3 egg whites, or 1 whole egg 1-1/2 cups fresh breadcrumbs 1 Tbsp grainy Dijon mustard 1 Tbsp Worcestershire sauce 1/2 tsp hot red pepper sauce (optional) 1 tsp salt; 1/2 tsp pepper 1/2 cup tomato sauce, ketchup, commercial chili sauce, or salsa 2 Tbsp chopped fresh parsley |
In a large bowl, combine beef, egg, breadcrumbs and seasonings. Add the cooled onion-garlic mixture, and knead everything lightly together until blended. |

Pat mixture into a loaf pan; (or, shape into a loaf and bake on a lined baking sheet).
Bake in preheated 350° oven for 45 minutes. |

1/4 cup tomato sauce or ketchup 1 Tbsp Dijon mustard |
Combine tomato sauce and mustard for topping. Brush topping on meatloaf and return to oven, uncovered, for another 25 minutes. Cool for 10 minutes before slicing and serving. |
