TOMATO SALAD with GRILLED ONIONS

Use this salad when you will be using the BBQ to cook the meat.

Ingredients: |

3 red onions
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 Tbsp fresh rosemary
|
Cut onions in ½ inch thick rounds
Whisk oil and vinegar together with rosemary.
Brush on the onion slices.
Grill onions for about 5 minutes on each side, or until golden brown.
Remove from grill and cool.

6 large, ripe tomatoes
fresh rosemary sprigs
|
Cut tomatoes into thick slices. Season with salt and pepper. Drizzle with olive oil and top with the onion rounds.
Garnish with sprigs of rosemary.
