Serve this with roast chicken, turkey or pork instead of making gravy. Papaya can be used instead of mango. Peel the cucumber if the skin is tough or waxed.

1 mango, peeled and finely diced
1/2 cup finely diced red onion
1/2 cup finely diced cucumber
2 Tbsp lime juice
1/2 tsp grated lime rind
1/4 tsp cumin
Combine all ingredients in a small bowl. Cover and let stand 1 hour, or up to 4 hours.
Makes about 1-1/2 cups
