Pasta with Cucumbers and Beans
Ingredients:
8 oz pasta: rotini, penne or linguine
1 Tbsp olive oil
1-1/2 cups cut green beans
2 green onions, thinly sliced
2 large tomatoes, coarsely chopped
1 clove garlic, chopped
basil: 1/2 tsp dried, or ? fresh
oregano: 1/2 tsp dried, or ? fresh
1/2 seedless cucumber, thinly sliced
2 Tbsp butter (garlic butter)
1 cup grated Mozzarella cheese

Method:
Add the pasta to a large pot of boiling, salted water. Cook until al dente.
While the pasta is boiling, heat oil in a saute pan. Add beans and saute until almost cooked (5 mins or less).
Stir in the green onions, tomatoes, garlic, basil and oregano. Simmer until everything is softened and the pasta is done.
Drain the pasta, then immediately add the butter and grated Mozzarella to it, stirring quickly to mix it all together.
Add the cucumbers to the bean and tomato mixture. Allow to cook just until heated.
