Garlicky Halibut or Haddock
Preheat the barbeque to medium-high
The fish can be cut into 1-inch chunks and threaded on skewers if you like.
Ingredients:
1½ lbs. fresh halibut or haddock filets
Marinade
2-3 cloves garlic, finely chopped
1/2 tsp salt
1 tsp coarsely ground black pepper
zest and juice of 2 limes
Serves 6
Method:
Combine the garlic, salt, pepper, lime zest and juice in a large bowl or Ziploc bag.
Marinate the fish filets in the garlic-lime mixture for at least 1/2 hour.
Leave as much marinade coating the filets as possible, and arrange on a fine wire mesh bbq tray to grill.
Grill over medium-high heat for 5-6 minutes, turning once, until just cooked through.
Serve with Caramelized Lemon Mayonnaise, Chickpea Fritters and Cabbage-Fennel coleslaw.
